5 Grain Summer Salad

I found a recipe a few months ago that I have meant to try. Today was the day and all I have to say is OMG! This is the perfect summer salad to either make for your family or to bring as a dish to pass at a summer BBQ. This is what summer should always taste like.

Ingredients:
2 Cups 5 Grain Quick Cook Grains
2 Tbsp Olive Oil
2 Tbsp Fresh Squeezed Lime Juice
1 Cup Chopped Cucumber
1 Small Chopped Onion
1 Chopped Mango
2 Chopped Tomatoes
1 Chopped Jalapeno
1/4 Cup Chopped Cilantro
 
Directions:
1. Follow prep and cooking instructions on grains packaging.
2. In the meantime, whisk olive oil and lime juice together to blend. Toss with cucumber, onion, tomato, jalapeño and cilantro in a large bowl and set aside.
3. When grains are done, spread them out on a large baking sheet to cool slightly (10 or so minutes) then toss with the rest of the ingredients. Add salt and pepper to taste.
4. Serve salad at room temperature.
