Daisy’s Goat Cheese Stuffed Tomatoes

I love tomatoes. I mean I love love love them. If I could put them in everything that I cook then I would… and I usually try to. Today I came up with a way to eat them that is so simple and seriously delicious. All you need is a baking pan, tomatoes, goat cheese, fresh cilantro, kosher salt and olive oil.

I recently learned from Marlene to always buy the tomatoes in the grocery store that still have the vine because they will last longer.

First you need to cut out the septa. Fancy word, eh?

Then pile on and squish the goat cheese in the hole where the septa was. Top with some olive oil, fresh cilantro and a sprinkle of kosher salt. I went a little wild with my olive oil and will use a lot less next time.

Then pop it in the oven at 450° for about 45 minutes. Once it cools down a little you will have a squishy, warm, goat cheesy tomato to eat!

    I love tomatoes too but only when they’re in season and fresh from someone’s garden or farmers market. I just picked up a few heirloom tomatoes today and will most definitely be trying this recipe out!
