I saw a breakfast recipe for something on Pinterest and I had to try it. It was so simple and so tasty!
I deviated quite a bit from the original recipe that I saw but it still turned out great!
Ingredients: Hash Browns, Olive Oil, Salt, Pepper, Eggs, Cheese & Bacon Bits.
Put about 4 cups of uncooked hash browns in a bowl with about 2 cups of cheese. Add the salt, pepper and olive oil and mix really well.
Make sure to spray your muffin tin really well with cooking spray. Smoosh the hash browns into the tin. I am sure you can use cupcake tins if you want. Place it in the oven for about 15 minutes at 425° or until the hash browns turn a little brown.
Pull it out of the oven and turn the oven down to 325º. Crack eggs on top of each one.
Add bacon bits and some cheese then place it back in the oven for about 12 minutes or until the eggs are as cooked as you want them.
This is what it looks like on the plate. Lily and JP gave this one rave reviews and will totally eat it again.
