What is Pi Day? If you don’t know what Pi Day is click here. If you do know what Pi Day is then you will know that the only logical thing to do is make a pie! Lily and I decided to try our hand at making a Lemon Meringue Pie.

This is what you need.

We have never squeezed our own lemon juice so this was pretty exciting.

Lily really liked giving them a squeeze. Unfortunately we needed 1/2 cup of juice and 3 lemons only gave us 1/4 cup… so we had to use some lemon juice from the fridge.

After what felt like a million whisks it is finally starting to set up!

So yellow and yummy looking.

Then we added the meringue topping. I have no idea how they make it look so pretty in the restaurants.

Ta-da! Our first Lemon Meringue Pie!

    The STIRRING!!! Your meringue looks really good – mine never sets that high. That was Chris’s favorite pie, so I’ve made them a lot. I was so happy when he decided that he liked Key Lime better.

    Island Foods has key lime juice so now I don’t have to squeeze a million key limes to make key lime pie. Life is good.

    That’s funny that you guys said that because JP requested Key Lime Pie for our next dessert! I’ve never made it or had it but when I hear about it I always think of Dexter season 5 when the terminally ill lady friend asks for “the perfect key lime pie” because she wants it to be poisioned.

    Key lime pie is very easy to make – especially if you can buy the juice. I’ll send you the recipe I use, if you want.
