JP is out of town again this week in what seems like his other home state of California. I’ve told you before that things are a lot lazier around here when he is gone. Today after gymnastics I told Lily we needed to head to the grocery store to buy some ingredients for something that we are making tomorrow. As we were walking into the store I asked her what we should make for dinner. I am pretty sure that I have the only kid in the world that would say “How about some portabella mushrooms and a nice piece of fish”. That’s my baby!

I have a super delicious and very easy fish recipe that is a huge hit in our house. Besides the fish (I use trout) y0u only need three ingredients. I use a pepper based seasoning, olive oil and pico de gallo. Then I bake it in the oven at 350° for about 15 minutes. Looks good already, huh?

For the side dishes I pan fried some portabella mushrooms in olive oil and garlic. Then I chopped up a tomato and cucumber for a simple side salad.

It is the best feeling when Lily cleans her plate. She couldn’t get enough.

After I took this picture she asked for more fish!
